Rosemary Garlic Roast Potatoes

Have I ever told you that I LOVE potatoes or about the time I ate nothing but potatoes and lettuce for 5 days? I did but that’s not what we’re here for.

The humble potato is really a hero in disguise. Potatoes offer us a variety of vitamins, minerals, different types of fibre and yes, contain all the essential amino acids and thus contain protein. You would have to eat a lot of potatoes if you were trying to meet your protein requirements through potatoes only, but you could in fact do it.

I think people cup potatoes in as an unhealthy food because of course, there are ways of preparing them that are not healthy. For example, poutine, loaded with bacon and sour cream or in the form of chips and fries. Well obviously these are not healthy ways to consume a potato but there are so many other ways like mashed (pro tip, use soy milk for added protein and creaminess), baked and topped with heart healthy ingredients like olive oil, chives, or loaded with beans and salsa and then of course, roasted.

I have tried around 30 different types of potatoes though there are more than 5000 varieties worldwide. You dont have to settle for russet, nugget, Yukon or red. Switch it up! Try a Japanese sweet potato in your stir-fry or a German butterball potato as a side.

Roasted Rosemary Garlic Potatoes

This recipe serves 3-4

Ingredients:

  • 2 pounds baby potatoes, halved

  • 3 tablespoons olive oil

  • 3 garlic cloves, minced

  • 1 tablespoon dried rosemary

  • Salt and pepper, to taste

  • 4-5 fresh rosemary sprigs, plus more for garnish.

Instructions:

  • Halve the baby potatoes and soak them in cold water with 2 tbsp of baking soda overnight or for at least 4 hours. 

  • When you’re about ready to cook, preheat the oven to 400ºF.

  • Drain and rinse the potatoes, dry them with a towel (they don’t need to be completely dry)

  • In a large mixing bowl, combine the halved baby potatoes, minced garlic, dried rosemary, olive oil, salt, and pepper. Toss until the potatoes are evenly coated.

  • Transfer the seasoned potatoes to a roasting dish, spreading them out in a single layer.

  • Top the potatoes with fresh rosemary sprigs for an extra burst of flavor.

  • Roast in the preheated oven for 35-45 minutes or until the potatoes are golden and crispy.

  • Once done, garnish with additional fresh rosemary sprigs if desired.

  • Serve these delightful roasted rosemary garlic baby potatoes as a flavorful side dish or a tasty snack.

Note: You can skip the soaking and drying of the potatoes but they won’t be as soft in the middle if you do. Trust me, its worth it! However, when you do this, you are removing the starch which means you’re going to benefit less nutritionally since starch, especially resistant starch can help control your blood glucose and feed your gut. I say, have some salad on the side or some more cooked veg and enjoy the damn potatoes!
