Chocolate Covered Strawberries

Serves… however many you want it to but makes about 15 strawberries depending on their size

Ingredients:

  • 1 lb. (16 oz.) strawberries, washed and thoroughly dried*

  • 1 cup (6 oz.) semi-sweet or dark chocolate chips (I use Enjoy Life)

  • 1/2 Tbsp. avocado oil

Instructions:

  1. Line a baking sheet or large plate with parchment paper.

  2. Wash and dry the strawberries thoroughly, ensuring they are completely dry before dipping.

  3. Choose one of the following melting methods:

    • Microwave Method: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the chocolate is smooth and glossy.

    • Double Boiler Method: Add 1-2 inches of water to a saucepan and place a heatproof bowl (glass or metal usually works best) on top of the saucepan. (The bottom of the bowl should not touch the water.) Bring the water to a simmer over medium heat and add your chocolate chips and coconut oil to the bowl. Gently melt the chocolate chips, stirring regularly until the mixture is glossy and smooth. Carefully remove the bowl from the pan and set aside.

  4. Hold each strawberry by the stem and coat it in the melted chocolate, allowing excess to drip off before transferring to the prepared baking sheet. Add optional decorations if desired.

  5. Repeat with the remaining strawberries until all are coated.

  6. Chill the strawberries for at least 20-30 minutes until the chocolate is set.

  7. For additional decoration, drizzle melted chocolate over the chilled strawberries before returning them to the refrigerator until set.

  8. Remove from the refrigerator 10-15 minutes before serving. Store any leftovers in a single layer in an airtight container in the refrigerator.
