Banana Bread
Low calorie, low fat, low sugar and full of fibre.
Directions:
Preheat your oven to 350°F (175°C). Lightly grease a 9-inch loaf pan.
In a medium-sized bowl, mash the ripe bananas using a fork until smooth.
Add the finely diced apple(if you choose to use it), erythritol, whole-wheat flour, unsweetened applesauce, baking soda, salt, and ground cinnamon and pumpkin pie spice to the bowl with the mashed bananas. Mix well until all ingredients are thoroughly combined.
Pour the batter into the greased loaf pan, spreading it evenly.
Place the pan in the preheated oven and bake for 40 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Once baked, remove the loaf from the oven and allow it to cool in the pan for about 15 minutes.
After cooling slightly, transfer the loaf to a wire rack to cool completely.
