Banana Bread

Low calorie, low fat, low sugar and full of fibre.

Ingredients:

  • 2 ripe bananas

  • 1/2 cup erythritol

  • 1 3/4 cups of whole-wheat flour

  • 1/2 cup of unsweetened applesauce

  • 1 teaspoon of baking soda

  • 1 teaspoon of salt

  • 1 teaspoon of ground pumpkin pie spice

  • 1/2 tsp cinnamon

Optional: 1/2 apple or pear, peeled and finely diced

Directions:

  • Preheat your oven to 350°F (175°C). Lightly grease a 9-inch loaf pan.

  • In a medium-sized bowl, mash the ripe bananas using a fork until smooth.

  • Add the finely diced apple(if you choose to use it), erythritol, whole-wheat flour, unsweetened applesauce, baking soda, salt, and ground cinnamon and pumpkin pie spice to the bowl with the mashed bananas. Mix well until all ingredients are thoroughly combined.

  • Pour the batter into the greased loaf pan, spreading it evenly.

  • Place the pan in the preheated oven and bake for 40 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  • Once baked, remove the loaf from the oven and allow it to cool in the pan for about 15 minutes.

  • After cooling slightly, transfer the loaf to a wire rack to cool completely.

  • Slice and serve your delicious banana apple bread, and enjoy!
